Title: Cocoa Fudge Cookies
Description: From Cooking Light
You can mix these incredibly easy, fudgy cookies right in the saucepan. When freshly baked, these thin cookies have crisp edges and chewy centers. You can make them with either Dutch process or natural unsweetened cocoa powder; we opted for the latter.
Ingredients: 1 cup all-purpose flour 1/4 teaspoon baking soda 1/8 teaspoon salt 5 tablespoons butter 7 tablespoons unsweetened cocoa 2/3 cup granulated sugar 1/3 cup packed brown sugar 1/3 cup plain low-fat yogurt 1 teaspoon vanilla extract Cooking spray
Directions:
Preheat oven to 350°. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, soda, and salt; set aside. Melt butter in a large saucepan over medium heat. Remove from heat; stir in cocoa powder and sugars (mixture will resemble coarse sand). Add yogurt and vanilla, stirring to combine. Add flour mixture, stirring until moist. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray.
Bake at 350° for 8 to 10 minutes or until almost set. Cool on pans 2 to 3 minutes or until firm. Remove cookies from pans; cool on wire racks.

Banana Bread (not your typical kind- Maxwell House Coffee Recipe Booklet 1970's)
Description: More like a banana fruit bread when I'm done with it! LOL! I put Cranberries, Raisins, Nuts and Cinnamon in it, and give it as gifts at Christmas time.
Ingredients: 1 3/4 C. All Purpose Flour 1 C. Sugar 2.5 Tsps. Baking Powder 1 Tsp. Salt 1 C. mashed, ripe Banana 1/2 C. Milk 1 egg, well beaten 2 Tbsps. Oil, or melted Shortening
Optional- Cinnamon (shake some in), Walnuts or Pecans (about 1 cup), 1 bag fresh Cranberries, rinsed, and Raisins (soaked first in a bowl of water, to swell up, then drained). You can add as much of these ingredients as you want- depending on how you want it to turn out. I add a lot.
Directions: Mix flour with sugar, baking powder and salt in one bowl (small size). In a large bowl, combine the banana, milk, egg and oil (or shortening). Add the flour mixture, stirring just until all flour is moistened. Then, add the optional items and mix well. Pour into a greased 9 x 5 loaf pan, or you can use a muffin pan (greased or with paper cup liners). Bake at 350 degrees, for about an hour, or until you test it in center and it comes out clean. Cool in pan for 10 minutes, then remove and finish cooling on a rack. If you make it in a loaf pan, then the next day you can toast it, or just have it plain. Yummm!
